Crunchy Nutty Granola
100ml maple syrup
1 tsp vanilla extract
500g oat flakes
100g flaked almonds
100g pumpkin seeds
100g sunflower seeds
dried fruit (add to taste)
1. Preheat oven to 150 degrees celsius. Place the butter, maple syrup and vanilla in a small pan and melt on a low heat.
2. Mix all the dry ingredients together, except the dried fruit in a large bowl. Stir in the melted ingredients and mix well. (only add enough of the liquid mixture just to coat the dry ingredients).
3. Spread mixture out on a large tray lined with baking paper and bake until golden brown for approximately 25 minutes. Stirring every 5 minutes, so it browns evenly.
4. Remove from the tray and leave to cool. When it has cooled completely add the dried fruit. Store at room temperature in a sealed container for up to a month.
Note: Most recipes ask you to use a lot more butter and maple syrup, so please adjust according to your own taste.
